Beef Tenderloin & Gorgonzola Enrobed in Bacon

Succulent medallions of beef tenderloin paired with rich Gorgonzola, wrapped in applewood-smoked bacon, and roasted to perfection. Serve with Dijon mustard or your favorite steak sauce. This one is sure to be a crowd-pleaser!

Ingredients

  • ½ lb beef tenderloin
  • Gorgonzola cheese
  • Bacon
  • Salt, pepper, and garlic powder (to taste)

Recipe

Preheat oven to 425°F.

Cut beef tenderloin into about 18 bite-sized pieces. Season with salt, pepper, and garlic powder.

Slice bacon strips into thirds and lay out on a work surface.

Spoon about ½ tablespoon of Gorgonzola cheese onto each bacon piece.

Place a piece of beef on top of the cheese. Roll the bacon around the beef and secure with a toothpick.

Arrange on a baking sheet and bake for 12–15 minutes, or until the bacon is cooked through.

Remove from the oven and let rest for about 5 minutes before serving.

Serve warm with your favorite steak sauce or Dijon mustard for dipping.
